As a matter of fact it is possible to discover the taste and feeling of the past in the dish only thanks to the passion that the producers develop in their work, whether they are fishermen with their little boat or small farmers. That passion shows itself in the absolute genuineness of the product offered. Above all this is thanks to a production procedure which is reduced to the essential. A courgette, just to give an example, which only a few hours ago still fed on the naked soil, is really able to restore all those organoleptic properties to the dish, not to mention its taste.
